Spice Roasted Pork

 

 

 

 

 

  • 1 boneless pork loin roast (2 pounds) ‘
  • 1 teaspoon salt
  • 3/4 dried thyme
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground black pepper
  • 1/8 ground nutmeg
  • 1/3 cup dry white wine
  • 2/3 chicken broth
  • Thyme sprigs for garnish

 

  1. Preheat oven to 350 degrees F. Pat port dry
  2. Mix salt and next 5 ingredients use to rub over pork
  3. Roast pork for about 1 to 1 1/2 hours or until internal temp. reaches 155 F
  4. Transfer pork to platter
  5. Meanwhile add wine to roasting pan. Heat to boiling over high heat: stir until brown bits are loosened. Add to broth: heat to boiling. Boil 2 minutes. Skim fat from pan juices. Slice pork thin, garnish and sever with your favorite vegetables.
