Spice Roasted Pork
- 1 boneless pork loin roast (2 pounds) ‘
- 1 teaspoon salt
- 3/4 dried thyme
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground black pepper
- 1/8 ground nutmeg
- 1/3 cup dry white wine
- 2/3 chicken broth
- Thyme sprigs for garnish
- Preheat oven to 350 degrees F. Pat port dry
- Mix salt and next 5 ingredients use to rub over pork
- Roast pork for about 1 to 1 1/2 hours or until internal temp. reaches 155 F
- Transfer pork to platter
- Meanwhile add wine to roasting pan. Heat to boiling over high heat: stir until brown bits are loosened. Add to broth: heat to boiling. Boil 2 minutes. Skim fat from pan juices. Slice pork thin, garnish and sever with your favorite vegetables.
