Pulled Chicken Salad

 

 

 

 

  • 1 small whole chicken, cooked rotisserie style
  • 2 tablespoons scallion, minced
  • 1 tablespoon parsley, chopped
  • 3 tablespoons celery, diced
  • 2 tablespoons capers, drained or chopped olives
  • 1 tablespoon mayonnaise
  • 1 tablespoon sour cream
  • Salt and freshly ground black pepper
  • 2 whole lettuce leaves
  1. Pull the meat from the bones and cut it into medium-size pieces. Refrigerate the meat until completely cooled. Mix the minced scallion, parsley, celery capers, mayonnaise, and sour cream until combined. Add the chicken and toss to coat evenly Add a pinch of salt and pepper, and adjust the amount of mayonnaise and sour cream to the desired consistency. Serve chilled over a lettuce leaf.
