Low Carb Herbed Meatballs
An Easy tasty little appetizer that will have you coming back for more. Try this recipe at your next tailgate party from Good House Keeping “Step-by Step” Cookbook
Ingredients:
- 2 slices firm white bread, torn
- 2 bunches green onions
- 2 pounds ground beef
- 2 large eggs
- 1/4 cup chopped fresh parsley
- 1 teaspoon dried mint
- 2 teaspoons salt
- 3/4 teaspoon ground black pepper
- 24 (6inch) bamboo skewers soaked
Prepare an outdoor grill or preheat broiler. In blender or food processor with knife blade attached, process bread to fine crumbs; transfer to large bowl. Chop enough green onions to equal 1/2 cup and add to bowl: cut remaining green onions into 1-inch lengths.
Add ground beef and next 5 ingredients to bowl with bread crumbs: mix until well combined. Shape mixture into forty-eight 1 inch balls. Thread 2 meatballs alternately with green-onioun pieces. Grill or broil at closest postion to heat surce, turning ounce, 8 to 10 minutes, just until cooked through serve hot.
Each skewer: 115 calories, 7g protein, 1g carbohydrate, 8g total fat, (3g sat.) 46mg cholesterol, 220mg of sodium
