Better Cheddar Sausage and Egg Cups

A quick and easy way to prepare breakfast. It is from one my favorite Low Carb Recipe cook Books “The Complete Low-Carb” cookbook by George Stella. I find all of his recipes easy to prepare and tasty. Look for my review in my Book Review list.

 

 

Ingredients:

  • Nonstick cooking spray
  • 6 ounces breakfast sausage, cooked and crumbled
  • 6 large eggs
  • 1 cup shredded Cheddar cheese
  1. Place oven rack in the center postion, and preheat oven to 375 degrees
  2. Divide the cooked and crumbled sausage equally into each of the 6 cups
  3. Crack an egg into each of the 6 cups over the top of the sausage, trying to keep the yolks unbroken
  4. Bake for 12 – 14 minutes, or until the egg whites are no longer runny
  5. etc….more stuff later
